Premiere: Rosato from Primitivo grapes
BEATO VINI used the new vinification facility and produced ROSATO wine for the first time. In anticipation of BEATO VINI's 10th anniversary in 2022, we wanted to put our team's skills into practice.
The success of such a project depends on the competent advice of experts who complement our team. It was only natural that we should use grapes from our own vineyards, namely Primitivo di Manduria PDO. We chose a young vineyard, which was planted in 2010. The first harvest took place on a beautiful day. 5 tonnes of grapes were immediately transported to the BEATO VINI winery, where the rasps were removed, the grapes crushed, then pressed and separated from the must. In the late afternoon, the grape juice was transferred to the new fermentation tank. The next day, we repeated this process again.
After 7 days, the young wine was again transferred to another tank. The results of the analyses and tastings show a fruity rosé, typical of Primitivo. The colour will be a light rosé, but at the moment it is not yet clear. It should be ready for bottling by the end of November. In the meantime we are anxiously awaiting this moment.
